So I made up some new guides and bolted then suckers on!
Here's what it looks like fitted. Note that I also bolted through the frame, not screwed into it. This cures the outward flexing problem with the rollers which is probably the reason the belt jumps off them in the first place.
Bolting through the frame meant that the servos couldn't be mounted 'properly' so I turned the bottom mounting brackets 180 degrees:
A side effect of which was that mounting them like this has stopped them flexing the anti-rotation bracket mounting point, so that's perfectly straight now too!
